Happy Independence Day Eat!
It is 4th of July and it’s time to take out the grill and eat up! But let’s add some tasty treats to the mix to bump up our nutritional value. You can do this when you:
Add some veggies!!
Grilled veggies can assist you with adding more nutrients to your celebration!
All you have to do is cut, prep and rub on a little oil with some add-ons. Maybe even wrap them in foil paper for the smaller veggies. But Don’t forget to wash your veggies first!
Add-ons can include: a drizzle of herb vinaigrette and/or other spices to your liking such as lemon pepper, powder chili and maybe even a hint of lime.
Veggies to try on the grill include:
Cucumbers, Squash & Zucchini: Slice in 1/2 inch thickness and grill for about 2-3 minutes
Mushrooms: using a grill basket or foil paper to wrap them in grill for about 5 -8 minutes
Asparagus: Cut off thick ends and grill for about 15 minutes. Soaking in water for about 30 minutes before may help cut the grilling time
-Eggplant: cut lengthwise or disks depending on the type eggplant and grill for 5 minutes
Bell Peppers: Remove stems and seeds and white ribs and cut strips or rings and grill for 2-4 minutes
Onions: Remove skin and slice horizontally 1/2 inch thickness and grill for about 5 minutes
Potatoes: wrap in foil after rubbing with oil and seasoning and grill for about 40 minutes and turn occasionally.
Fruit to try on the grill:
Tomatoes: Slice and grill cut side down for about 2-3 minutes.
Pineapple: Slice and grill turning occasionally for about 5 minutes.
